I remember a favorite aunt made something like this when I was 4 years old, I never got her recipe and she's gone now but this one comes close.

yield Makes about 1-1/.4 lbs

Ingredients

  • 1 1/4 cups brown sugar, firmly packed
  • 1/4 cup cream or milk
  • 1 tablespoon butter or margarine
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • 2 cups whole almonds, walnuts, or pecans

How To Make crystallized nuts

  • Step 1
    Combine sugar, cream, butter, cinnamon, and salt in 2-quart saucepan; mix well. Bring to boil over medium heat.
  • Step 2
    Place thermometer in mixture. Continue cooking to 244 degrees (firm ball stage) stirring constantly Remove from heat.
  • Step 3
    Add vanilla and nuts. Continue stirring until candy grains on nuts.
  • Step 4
    Spread on cookie sheet to cool.
