I remember a favorite aunt made something like this when I was 4 years old, I never got her recipe and she's gone now but this one comes close.

1 1/4 c
brown sugar, firmly packed
1/4 c
cream or milk
1 Tbsp
butter or margarine
1/2 tsp
1/8 tsp
1 tsp
2 c
whole almonds, walnuts, or pecans

How to Make Crystallized Nuts


  • 1Combine sugar, cream, butter, cinnamon, and salt in 2-quart saucepan; mix well. Bring to boil over medium heat.
  • 2Place thermometer in mixture. Continue cooking to 244 degrees (firm ball stage) stirring constantly Remove from heat.
  • 3Add vanilla and nuts. Continue stirring until candy grains on nuts.
  • 4Spread on cookie sheet to cool.
