My mother in law showed me how to make this many years ago. When you have milk that has gone bad she told me never throw it a way that's a waste, make candy. So this recipe does not have exact amounts it goes according to how much milk you have.

Ingredients
- 2 cups milk, sour
- 2 cups coconut, shredded
- 3 tablespoons sugar
- 1 teaspoon vanilla, or coconut extract
- - cinnamon sticks (optional)
How To Make coconut candy

Step 1if using a bag of sweetened shredded coconut you would just add a few table spoons of sugar. If using fresh shredded or grated coconut use more sugar. Just adjust according to your taste.

Step 2shred coconut if using a fresh one you can pour the water from the coconut into the pot also.

Step 3pour milk into pot add coconut, start with 2 or 3 tbs of sugar 1 tsp of vanilla and if using cinnamon 1 sticks.

Step 4cook over medium low heat constantly stirring and continue cooking and stirring until mixture thickens. Taste to check sweetness and add more sugar if needed.

Step 5when very thick place tablespoon sized mounds on a cookie sheet lined with parchment paper or wax paper, refrigerate to cool. enjoy 8] you can add a little food coloring for color if you like.
