OH YUMMMMMMMMM! I've tried these with dark and milk chocolate and they are definitely better with the milk chocolate. For better results, use a good chocolate chip like Ghiradelli.

Ingredients For bailey's irish cream truffles

  • 1/4 c
    bailey's irish cream
  • 1
    12 oz. pkg. milk chocolate chips
  • 1/4 c
    heavy cream
  • 1 Tbsp
    butter
  • 2
    egg yolks

How To Make bailey's irish cream truffles

    Melt chocolate in a double boiler. Stir in Bailey's and cream.

    Beat egg yolks, stir a small amount of chocolate mixture into eggs to temper them, then slowly add the yolks to the chocolate mixture. Mixture will thicken. Add butter and mix well.

    Refrigerate overnight or several hours. Form mixture into balls. Roll balls in powdered sugar and then cocoa, or whatever else you might want to roll them in.

    OR as an alternative: Dip balls into melted chocolate. (12 oz. Package of milk chocolate chips and 1/4 stick paraffin mixture.)
