1/4 cbailey's irish cream
112 oz. pkg. milk chocolate chips
1/4 cheavy cream
How to Make Bailey's Irish Cream Truffles
- Melt chocolate in a double boiler. Stir in Bailey's and cream.
- Beat egg yolks, stir a small amount of chocolate mixture into eggs to temper them, then slowly add the yolks to the chocolate mixture. Mixture will thicken. Add butter and mix well.
- Refrigerate overnight or several hours.
Form mixture into balls. Roll balls in powdered sugar and then cocoa, or whatever else you might want to roll them in.
- OR as an alternative: Dip balls into melted chocolate. (12 oz. Package of milk chocolate chips and 1/4 stick paraffin mixture.)
