OH YUMMMMMMMMM! I've tried these with dark and milk chocolate and they are definitely better with the milk chocolate. For better results, use a good chocolate chip like Ghiradelli.

Ingredients

1/4 c
bailey's irish cream
1
12 oz. pkg. milk chocolate chips
1/4 c
heavy cream
1 Tbsp
butter
2
egg yolks

How to Make Bailey's Irish Cream Truffles

Step-by-Step

  • 1Melt chocolate in a double boiler. Stir in Bailey's and cream.
  • 2Beat egg yolks, stir a small amount of chocolate mixture into eggs to temper them, then slowly add the yolks to the chocolate mixture. Mixture will thicken. Add butter and mix well.
  • 3Refrigerate overnight or several hours.

    Form mixture into balls. Roll balls in powdered sugar and then cocoa, or whatever else you might want to roll them in.
  • 4OR as an alternative: Dip balls into melted chocolate. (12 oz. Package of milk chocolate chips and 1/4 stick paraffin mixture.)
