bailey's irish cream truffles
OH YUMMMMMMMMM! I've tried these with dark and milk chocolate and they are definitely better with the milk chocolate. For better results, use a good chocolate chip like Ghiradelli.

Ingredients
- 1/4 cup bailey's irish cream
- 1 - 12 oz. pkg. milk chocolate chips
- 1/4 cup heavy cream
- 1 tablespoon butter
- 2 - egg yolks
How To Make bailey's irish cream truffles

Step 1Melt chocolate in a double boiler. Stir in Bailey's and cream.

Step 2Beat egg yolks, stir a small amount of chocolate mixture into eggs to temper them, then slowly add the yolks to the chocolate mixture. Mixture will thicken. Add butter and mix well.

Step 3Refrigerate overnight or several hours. Form mixture into balls. Roll balls in powdered sugar and then cocoa, or whatever else you might want to roll them in.

Step 4OR as an alternative: Dip balls into melted chocolate. (12 oz. Package of milk chocolate chips and 1/4 stick paraffin mixture.)
