zesty key lime cake
This delicious, moist lime cake would be a super cake for St Patty's day or even Easter...I made this cake last St Pat, but never got it posted. You can make it with or without the food coloring...I'm part Irish, so greens just fine with me...enjoy! My photos

Ingredients
- 1 - 18.25 packages lemon cake mix
- 1 1/3 cups vegetable oil
- 4 - eggs
- 1 package (3 oz) lime jell-o
- 3/4 cup orange juice - i used fresh squeezed
- - green food coloring - optional
- FROSTING
- 1/2 cup butter (1 stick), softened
- 1 package cream cheese (8 oz), softened
- 4 cups confectioners' sugar
- 3 - 31/2 tablespoons lime juice or to taste
- 6 - drops green food coloring - optional
How To Make zesty key lime cake

Step 1Preheat oven to 350 degree F. - 325 degree for dark baking pan. Spray a 9 x 13 cake pan with nonstick cooking spray.

Step 2Combine all cake ingredients in mixing bowl. Add 3 drops green food coloring if you want a more intense green color.

Step 3Bake according to directions on box (25-35 min.). Cool on cooling rack.

Step 4For frosting: Beat butter and cream cheese together. Add juice and powdered sugar. Blend with mixer until smooth.

Step 5Add 4-6 drops green food coloring if you would like green color for St. Patrick's Day.

Step 6Frost cooled cake and refrigerate.
