I made this cake before realizing I had no ingredients for icing. So I grabbed some strawberries. Sliced and boiled with 2 tbsp. Sugar until a syrup. Poured onto cool cake. Planned to go get whip Creme the next day but after having a piece realized it needed none. is delicious as the syrup sinks into the cake tasting delicious by itself. Sort of a California style fruit cake. Haha hmm? And just imagine how good this is gonna be when layered in a parfait dish with fresh strawberries & whipped cream! YUM
1Set eggs out to warm to room temperature.
Preheat oven 350 degrees F
Then divide egg whites. Whip until stiff peaks.
2Mix dry ingredients with water & oil until smooth. Add chopped pineapple to batter.
fold egg whites into batter.
place batter in 9 by 12 baking pan.
3Bake 25 min. Until golden brown. Then cool 20 minutes.
while cake is baking, slice strawberries, place in sm. Pot, add sugar and boil while stirring into a nice thick syrup. Approx. 15 min. Let cool
Pour over cooled cake. Refrigerate and enjoy.
