Ingredients
- 2 cups flour
- 1 cup butter
- 3 - eggs
- 1 cup buttermilk
- 1 cup sugar
- 1 cup chopped dates
- 1 cup jam (any kind, preferably blackberry)
- 1 cup raisins
- 1 - apple, grated
- 1 cup chopped nuts
- 1 teaspoon baking soda or baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon cinnamon (optional)
- 1/8 teaspoon allspice (optional)
- 1/8 teaspoon ground cloves (optional)
- BROWN SUGAR FROSTING
- 1 cup brown sugar, packed
- 1/2 cup butter
- 1/4 cup milk
- 3 cups powdered sugar
How To Make tennessee jam cake

Step 1Sift flour, salt, baking soda, and spices together, reserving 1/4 cup of flour to flour nuts, dates, and raisins. Cream together the sugar and butter. Add eggs, one at a time and mix well after each addition.

Step 2Combine buttermilk and jam. Add alternately with combined dry ingredients to the creamed mixture.

Step 3Flour the fruit and nuts and stir them into the batter. Stir in the grated apple.

Step 4Bake in 3 greased and floured 9 inch cake pans in a 350 degree oven for 30 minutes or until cake tests done. Cool on wire racks before frosting.

Step 5Brown Sugar Frosting: Combine brown sugar, butter and milk in large saucepan; bring to a boil, stirring constantly. Remove from heat; cool 10 minutes. Gradually add powdered sugar until well blended.
