strawberry comfort cake
This is an easy quick recipe for a light dessert for unexpected guests or just a little something sweet at the end of the day.

Ingredients
- 1 package strawberries, fresh, cleaned and sliced
- 1/2 cup truvie sweetner for strawberries
- 2 cups bisquick mix
- 1 cup truvie sweetner for cake
- 2 - large eggs
- 1/4 cup cinnamon for cake
- 1 teaspoon vanilla extract for cake
- 2 cups milk for cake
- 1 package vanilla instant pudding mix (large)
How To Make strawberry comfort cake

Step 1Preheat oven to 325 to 350 depending on how hot your oven gets. These cakes will not be very thick. Prepare cake pans,( I used 9 in. with this recipe). Put Truvie Sweetener on strawberries cover and put inside refrigerator.

Step 2Mix together Bisquick mix, milk, vanilla, egg, cinnamon and pour into cakes pans. If mix is too thick add more milk in small amounts until batter is pour-able. I always drop cake pans onto counter to cause any air bubbles to come to top. Place in oven and put timer on 10 minutes to check to see if cake is done.

Step 3When cake is finished baking turn onto lifted cake grates to cool. While cooling take a blender and pour pudding mix with milk according to directions and blend. As pudding begins to firm, add 3/4 of the sliced strawberries and blend into the pudding. Place bottom layer of cake on cake dish and poke holes in it with a skewer or straw. Smooth 1/2 strawberry pudding mix over cake. Add top layer. Pour remaining strawberry pudding mix over top and decorate with the strawberries that are left. I slice and serve with a scoop of soft serve vanilla ice cream. Enjoy
