Mother made this carrot cake quite often when I was growing up. I ran across the recipe a few weeks ago and just had to make it. While eating this cake, I can close my eyes and I'll be right back home in Mama's kitchen! I love this cake, and it's so easy to throw together. Hope you'll give it a try.
1In mixer cream together 2 cups sugar, 1 cup oil, and 4 eggs. Add eggs one at a time.
2In large bowl mix together 2 tsp. soda, 1 1/2 tsp. cinnamon,1 tsp. salt, and 2 cups flour. Add to creamed mixture. Mix until well blended. Add 2 jars junior baby food carrots. Mix about 2 minutes more.
3Bake at 350 degrees in 9 by 13 cake pan, for 35 minutes. If using bunt pan it will take about 45 minutes. Top with cream cheese frosting.
