- 1 box yellow cake mix
- 3 lbs. ricotta
- 8 eggs
- 3 tsp. vanilla
- 3/4 c. sugar
How to Make Ricotta Cake
- 1Prepare yellow cake mix as directed on box. Grease a 10x16 pan and pour the prepared cake mix into pan. (If you don't have a 10x16 pan use a pan closes to it).
- 2Mix together with mixer until smooth:
Pour this mixture completely on top of the cake mixture.
(Do Not Mix into cake mixture). Bake @ 350 ° for 45 mins.
- 3While cake is baking in a small bowl mix together :
2/3 C. Sugar
2 tsp. Cinnamon
Sprinkle this mixture on top of cake and bake for an additional 10 mins. Cake will be moist and may fall a little but don't worry.
- 4Cool completely before cutting. When cooled cut into pieces a little bigger than bite sizes. Refrigerate before serving.
