Ricotta Cake

This recipe was my Mom's favorite Holiday cake. I have been making it for 35 years and on the Holidays the family looks forward to Ricotta Cake. My Mom has passed this recipe to so many people and she would be thrilled to have it on justapinch. Enjoy!

  • 1 box yellow cake mix
  • 3 lbs. ricotta
  • 8 eggs
  • 3 tsp. vanilla
  • 3/4 c. sugar

How To Make

    Prepare yellow cake mix as directed on box. Grease a 10x16 pan and pour the prepared cake mix into pan. (If you don't have a 10x16 pan use a pan closes to it).

    Mix together with mixer until smooth: Ricotta Eggs Vanilla Pour this mixture completely on top of the cake mixture. (Do Not Mix into cake mixture). Bake @ 350 ° for 45 mins.

    While cake is baking in a small bowl mix together : 2/3 C. Sugar 2 tsp. Cinnamon Sprinkle this mixture on top of cake and bake for an additional 10 mins. Cake will be moist and may fall a little but don't worry.

    Cool completely before cutting. When cooled cut into pieces a little bigger than bite sizes. Refrigerate before serving.
