I found this recipe many years ago and it became a favorite in our home! My kids have played a lot of sports and this became the best and easiest dessert to take any banquet, covered dish dinners or just anywhere! Travels nicely too!

Ingredients

  • 2 sticks butter, softened
  • 1 1/2 cups sugar
  • 4 - eggs
  • 1 teaspoon vanilla extract for the blueberry or almond extract for the cherry
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 can 21oz. blueberry or cherry
  • 1/4 cup powdered sugar(optional)

How To Make quick fruit dessert

  • Step 1
    In a large mixing bowl, cream together the butter and sugar.
  • Step 2
    Add the eggs, beat until light and fluffy.
  • Step 3
    Add the vanilla extract(or almond).
  • Step 4
    Mix in the flour and baking powder, mix until smooth.
  • Step 5
    Butter a 13x9 inch baking dish, and pour the mixture into the dish.
  • Step 6
    Spoon the pie filling into the cake, into 16 spots, spacing 4 spoonfuls evenly in each direction
  • Step 7
    Bake at 350F for 45-50 minutes or until golden and cake tests done. Filling will sink into the cake while baking.
  • Step 8
    To serve, cut into the desired serving sizes and sprinkle with confectioners sugar. (optional) ENJOY!!
