Ingredients
- 1 cup pumpkin puree
- 1 1/2 cups flour
- 1/2 stick butter, melted
- 1/2 cup agave or honey
- 2 - eggs
- 1/2 cup shredded sweetened coconut flakes
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup powdered sugar
- 1 tablespoon cream cheese softened
- 1 teaspoon orange juice
How To Make pumpkin coconut loaf w/orange cream cheese glaze

Step 1In a large bowl combine all ingredients (minus the last 3, that's for the glaze).

Step 2pour into a lightly sprayed loaf pan ( or you can make into cupcakes).

Step 3bake at 350 degrees for 30 mins or until you insert toothpick in the middle and comes out clean.

Step 4in the mean time...mix together the last 3 ingredients to create a glaze.....take out loaf and let cool about 10 mins, then turn over and pour the glaze on top...let cool completely upon serving....or it will fall apart...YES it's that moist...YUM
