  • 1 c
    pumpkin puree
  • 1 1/2 c
  • 1/2 stick
    butter, melted
  • 1/2 c
    agave or honey
  • 2
  • 1/2 c
    shredded sweetened coconut flakes
  • 1/2 tsp
  • 1/2 tsp
  • 1 tsp
    baking soda
  • 1/2 tsp
  • 1/2 c
    powdered sugar
  • 1 Tbsp
    cream cheese softened
  • 1 tsp
    orange juice

How to Make Pumpkin Coconut Loaf w/Orange Cream Cheese Glaze


  1. In a large bowl combine all ingredients (minus the last 3, that's for the glaze).
  2. pour into a lightly sprayed loaf pan ( or you can make into cupcakes).
  3. bake at 350 degrees for 30 mins or until you insert toothpick in the middle and comes out clean.
  4. in the mean time...mix together the last 3 ingredients to create a glaze.....take out loaf and let cool about 10 mins, then turn over and pour the glaze on top...let cool completely upon serving....or it will fall apart...YES it's that moist...YUM
