pumpkin puree
1 1/2 c
1/2 stick
butter, melted
1/2 c
agave or honey
1/2 c
shredded sweetened coconut flakes
1/2 tsp
1/2 tsp
1 tsp
baking soda
1/2 tsp
1/2 c
powdered sugar
1 Tbsp
cream cheese softened
1 tsp
orange juice

How to Make Pumpkin Coconut Loaf w/Orange Cream Cheese Glaze


  • 1In a large bowl combine all ingredients (minus the last 3, that's for the glaze).
  • 2pour into a lightly sprayed loaf pan ( or you can make into cupcakes).
  • 3bake at 350 degrees for 30 mins or until you insert toothpick in the middle and comes out clean.
  • 4in the mean time...mix together the last 3 ingredients to create a glaze.....take out loaf and let cool about 10 mins, then turn over and pour the glaze on top...let cool completely upon serving....or it will fall apart...YES it's that moist...YUM
