Again experimenting with little bits of ingredients in my fridge...This one is a sure Holiday hit...

Ingredients

  • 1 cup pumpkin puree
  • 1 1/2 cups flour
  • 1/2 stick butter, melted
  • 1/2 cup agave or honey
  • 2 - eggs
  • 1/2 cup shredded sweetened coconut flakes
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar
  • 1 tablespoon cream cheese softened
  • 1 teaspoon orange juice

How To Make pumpkin coconut loaf w/orange cream cheese glaze

  • Step 1
    In a large bowl combine all ingredients (minus the last 3, that's for the glaze).
  • Step 2
    pour into a lightly sprayed loaf pan ( or you can make into cupcakes).
  • Step 3
    bake at 350 degrees for 30 mins or until you insert toothpick in the middle and comes out clean.
  • Step 4
    in the mean time...mix together the last 3 ingredients to create a glaze.....take out loaf and let cool about 10 mins, then turn over and pour the glaze on top...let cool completely upon serving....or it will fall apart...YES it's that moist...YUM
