vegetable oil
3 large
eggs

brown sugar (divided)

100% pumpkin puree
1 Tbsp
vanilla

FOR TOPPING

1 stick
melted butter

brown sugar

peeled, sliced, and cored granny smith apples

How to Make Pumpkin Apple Upside Down Cake

Step-by-Step

  • 1Preheat the oven to 350ยบ.
  • 2Place 1 cup of brown sugar and melted butter in bottom of a 9 x 13 baking pan. Mix well making sure to dissolve the brown sugar.
  • 3Arrange apple slices 3 across and 5 down inside the pan.
  • 4Set pan aside to prepare cake.
  • 5Combine oil, brown sugar, granulated sugar eggs and vanilla in bowl of mixer until light and creamy.
  • 6Add in pumpkin & blend to combine.
  • 7In a separate bowl combine dry ingredients and whisk to incorporate.
  • 8Add dry ingredients gradually to the wet mixture until fully incorporated.
  • 9Pour batter over the apples and brown sugar in the prepared baking pan, spreading evenly.
  • 10Bake for 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • 11Remove from oven and invert onto a baking tray. Allow to cool completely before serving.
