Ingredients
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup brown sugar (divided)
- 1 cup sugar
- 1 1/2 cups 100% pumpkin puree
- 1 tablespoon vanilla
- 3 cups flour
- 1 teaspoon baking soda
- 1 tablespoon pumpkin pie spice
- 1 teaspoon salt
- 1 teaspoon baking powder
- FOR TOPPING
- 1 stick melted butter
- 1 cup brown sugar
- 2 - peeled, sliced, and cored granny smith apples

Step 1Preheat the oven to 350º.

Step 2Place 1 cup of brown sugar and melted butter in bottom of a 9 x 13 baking pan. Mix well making sure to dissolve the brown sugar.

Step 3Arrange apple slices 3 across and 5 down inside the pan.

Step 4Set pan aside to prepare cake.

Step 5Combine oil, brown sugar, granulated sugar eggs and vanilla in bowl of mixer until light and creamy.

Step 6Add in pumpkin & blend to combine.

Step 7In a separate bowl combine dry ingredients and whisk to incorporate.

Step 8Add dry ingredients gradually to the wet mixture until fully incorporated.

Step 9Pour batter over the apples and brown sugar in the prepared baking pan, spreading evenly.

Step 10Bake for 45 minutes or until a toothpick inserted in the center of the cake comes out clean.

Step 11Remove from oven and invert onto a baking tray. Allow to cool completely before serving.
