  • 1/2 c
    vegetable oil
  • 3 large
  • 1 c
    brown sugar (divided)
  • 1 c
  • 1 1/2 c
    100% pumpkin puree
  • 1 Tbsp
  • 3 c
  • 1 tsp
    baking soda
  • 1 Tbsp
    pumpkin pie spice
  • 1 tsp
  • 1 tsp
    baking powder

  • 1 stick
    melted butter
  • 1 c
    brown sugar
  • 2
    peeled, sliced, and cored granny smith apples

How to Make Pumpkin Apple Upside Down Cake


  1. Preheat the oven to 350º.
  2. Place 1 cup of brown sugar and melted butter in bottom of a 9 x 13 baking pan. Mix well making sure to dissolve the brown sugar.
  3. Arrange apple slices 3 across and 5 down inside the pan.
  4. Set pan aside to prepare cake.
  5. Combine oil, brown sugar, granulated sugar eggs and vanilla in bowl of mixer until light and creamy.
  6. Add in pumpkin & blend to combine.
  7. In a separate bowl combine dry ingredients and whisk to incorporate.
  8. Add dry ingredients gradually to the wet mixture until fully incorporated.
  9. Pour batter over the apples and brown sugar in the prepared baking pan, spreading evenly.
  10. Bake for 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
  11. Remove from oven and invert onto a baking tray. Allow to cool completely before serving.
