Ingredients

  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup brown sugar (divided)
  • 1 cup sugar
  • 1 1/2 cups 100% pumpkin puree
  • 1 tablespoon vanilla
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • FOR TOPPING
  • 1 stick melted butter
  • 1 cup brown sugar
  • 2 - peeled, sliced, and cored granny smith apples

How To Make pumpkin apple upside down cake

  • Step 1
    Preheat the oven to 350º.
  • Step 2
    Place 1 cup of brown sugar and melted butter in bottom of a 9 x 13 baking pan. Mix well making sure to dissolve the brown sugar.
  • Step 3
    Arrange apple slices 3 across and 5 down inside the pan.
  • Step 4
    Set pan aside to prepare cake.
  • Step 5
    Combine oil, brown sugar, granulated sugar eggs and vanilla in bowl of mixer until light and creamy.
  • Step 6
    Add in pumpkin & blend to combine.
  • Step 7
    In a separate bowl combine dry ingredients and whisk to incorporate.
  • Step 8
    Add dry ingredients gradually to the wet mixture until fully incorporated.
  • Step 9
    Pour batter over the apples and brown sugar in the prepared baking pan, spreading evenly.
  • Step 10
    Bake for 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Step 11
    Remove from oven and invert onto a baking tray. Allow to cool completely before serving.
