These are made with a cake mix and pink champagne. I LOVE pink champagne! It always reminds me of the movie "An Affair To Remember". So fancy.. These are pretty simply and very sweet and delicate!

Ingredients
- CUPCAKES
- 1 box white cake mix
- 1 1/4 cups pink champange
- 1/3 cup vegetable oil
- 3 - egg whites
- 4-5 - drops of red food coloring
- ICING
- 1/2 cup softened butter
- 4 cups powdered sugar
- 1/4 cup pink champagne
- 1 teaspoon vanilla
- 4-5 - drops of red food coloring
- - edible pink or white pearls
How To Make pink champagne cupcakes with pink champagne icing

Step 1Heat oven to 350 and place cupcake liners in 2 cupcake pans, totaling 24 liners.

Step 2In a large bowl, mix cake mix and champagne. Add oil, egg whites, and food color and beat with an electric mixer for 2 minutes. Divide evenly among the cups and bake for 17-22 minutes. Cool 10 minutes and remove from pan. Cool for 30 more minutes before frosting.

Step 3Beat all of the icing ingredients together with an electric mixer on medium speed until smooth. You can use a piping tool to put the icing on the cupcakes, I just didn't have one for the batch that was in the picture. You can also put the icing in a Ziploc bag and snip off a small part of the corner for a home made piping bag :) Top with the edible pearls and enjoy! They look very fancy and I love the look and taste of them.
