Pineapple & Coconut Cake...and oh no...it's not any old cake....come and see what I did to it! It's very light & fluffy inside, moist and the flavours are really incredible! Have a go making this and I'm sure you will like it lots too.

Ingredients
- 2 cups sugar
- 1 cup butter, softened
- 4 medium eggs
- 3 1/4 cups all purpose flour
- 2 1/2 teaspoons baking powder
- 1 cup coconut milk, unsweetened
- 1 tablespoon vanilla extract
- 2 cups pineapple, chunks
- 1/2 cup coconut milk, unsweetened (topping)
- 8 ounces creamy cool whip or fresh whipped cream
- 1 teaspoon vanilla extract (for the cream)
