pina colada cake w/cutie glaze
I was looking for a recipe for a cake using vegetable oil today because I was out of butter. I couldn't find anything I liked, so I made up my own. It turned out so very moist and yummy, I just had to post it.

Ingredients
- 2 1/2 cups flour
- 2 cups sugar
- 1 cup vegetable oil
- 4 - eggs
- 1 package instant banana cream pudding mix
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 can coconut milk
- 3 - bananas, mashed
- 2 teaspoons pure vanilla extract

Step 1Beat oil, eggs, sugar, vanilla and coconut cream until well blended. Whisk together flour, baking powder, soda, pudding mix and salt. Add to oil mixture in thirds. Add mashed bananas last, mixing well. Pour into bundt pan sprayed with cooking spray. Bake at 350 degrees until tester comes out clean about an hour. Make glaze from 1 cup confectioner’s sugar, ½ tsp salt & juice of 2 cuties (tangerines) with zest. Pour glaze over warm cake with a spoon.
