~ perfectly spiced apple cake ~

This is a recipe, my preachers wife ( Linda ) shared with me. All I had to do was buy the cardamom, which my daughter bought me a large bottle for Christmas. I couldn't wait to make this cake. She brought it to Church over a year ago, and everyone loved it. Enjoy!

Ingredients

  • 1 stick butter, divided
  • 1/2 cup light brown sugar
  • 1 1/2 teaspoons molasses
  • 2 - eggs
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 cup flour
  • 1/2 teaspoon each - cardamom, cinnamon, ground ginger, ground cloves, salt
  • 3 - apples, peeled and sliced, about 1/2 inch thick
  • 1/2 cup milk

How To Make ~ perfectly spiced apple cake ~

  • Step 1
    Preheat oven to 375 degree F. Spray a 9 inch cake pan or I used a deep dish pie plate,( Linda makes hers in an iron skillet ) with nonstick cooking spray. In a skillet or saucepan, melt 6 tablespoons butter, add brown sugar and molasses, stirring until smooth. Let simmer for a few minutes.
  • Step 2
    Pour mixture into bottom of prepared cake pan. Peel apples and slice. Overlap in a circle, staring on the outer inside edges of pan and fill in the center. Sprinkle with a little cinnamon and set aside. Heat milk and remaining 2 tablespoons butter in a saucepan. Keep warm.
  • Step 3
    In a small bowl whisk together the flour, salt, cardamom, cinnamon, ginger, cloves and baking powder.
  • Step 4
    Beat eggs for 3 - 4 minutes or until pale yellow and thickened.
  • Step 5
    Slowly add sugar and beat for about 5 minutes.
  • Step 6
    Add the dry ingredients, mix until smooth, then add the milk and butter mixture. Beat until smooth.
  • Step 7
    Pour batter over the apples and bake for approx 40 minutes or until pick comes out clean.
  • Step 8
    Let cool for 10 - 15 minutes, take a slender knife and go around the inside edges of pan. Place serving plate over the pan and flip upside down.
  • Step 9
    Can serve warm or leave finish cooking. Great with whipped cream or ice cream. Enjoy!
