pecan pie cupcakes

I love pecan pie anytime of the year and these satisfies my cravings. This is a very easy recipe but decadent and rich dessert. These are NOT you average cupcakes and are similar to pecan pie with a cake like texture. My son brought me this cupcake from a lady here in town that sells them and wanted me to figure out the recipe, so after looking for the recipe this is what i came up with, with a little tweaking on my own. These cupcakes need NO frosting at all. Hope you enjoy these.

Ingredients For pecan pie cupcakes

  • 1 c
    finely chopped pecans
  • 1/2 c
    all purpose flour
  • 1 c
    packed dark brown sugar
  • 2/3 c
    melted butter
  • 2
    eggs beaten
  • 1/2 tsp
    vanilla extract
  • 1/3 c
    dark karo syrup

How To Make pecan pie cupcakes

  • 1
    Mix brown sugar and flour together, add melted butter,beaten eggs,vanilla dark karo syrup and mix well. Add finely chopped pecans and mix well.

    Prepare muffin pan with cupcake holders and spray with cooking spray. Scoop batter into cups (i use a pampered chef lg scoop) leaving at least 1/2 on the top.

    Bake at 350 for 20=25 minutes, take out and let cool on a baking rack.
