My mom always made this at Easter and Christmas and Thanksgiving! It's at least 45 years old, and worth the time! If it cracks on top, just top off with cherry or blueberry pie filling!

Ingredients

  • 1 pound ricotta cheese
  • 2 cups sour cream
  • 16 ounces cream cheese
  • 11/2 cups granulated sugar
  • 1/2 cup butter, melted
  • 3 - eggs, extra large
  • 3 tablespoons flour
  • 3 tablespoons corn starch
  • 5 teaspoons vanilla
  • 5 teaspoons lemon juice

How To Make pat 's holiday cheesecake

  • Step 1
    Preheat oven to 350. Combine ricotta and sour cream in bowl of stand mixer. Slowly beat in cream cheese, sugar and butter. Increase speed to medium and add eggs, one at a time.
  • Step 2
    Combine dry ingredients and add to mixer, blend til combined, then add vanilla and lemon juice. Beat on high for 5 minutes.
  • Step 3
    Pour into 10" spring pan. Bake for one hour. Turn oven off and leave in the oven for one more hour.
  • Step 4
    Remove and cool slightly. Take off spring pan side. If it cracked on top, you can hide with fruit!
