My mom always made this at Easter and Christmas and Thanksgiving! It's at least 45 years old, and worth the time! If it cracks on top, just top off with cherry or blueberry pie filling!

1 lbricotta cheese

2 csour cream

16 ozcream cheese

11/2 cgranulated sugar

1/2 cbutter, melted

3eggs, extra large

3 Tbspflour

3 Tbspcorn starch

5 tspvanilla

5 tsplemon juice
How To Make pat 's holiday cheesecake

1Preheat oven to 350. Combine ricotta and sour cream in bowl of stand mixer. Slowly beat in cream cheese, sugar and butter. Increase speed to medium and add eggs, one at a time.

2Combine dry ingredients and add to mixer, blend til combined, then add vanilla and lemon juice. Beat on high for 5 minutes.

3Pour into 10" spring pan. Bake for one hour. Turn oven off and leave in the oven for one more hour.

4Remove and cool slightly. Take off spring pan side. If it cracked on top, you can hide with fruit!
