My daughter and I made these, and they are to die for. My husband, who doesn't eat many sweets like this, ate 4 of them. The kids scarfed down the rest. Okay, I admit I had a couple. I couldn't resist!

These are not only really pretty cupcakes, but they are delicious and will be a real crowd-pleaser. We loved the Oreo on the bottom. It's a hidden treat! The frosting is perfect and tastes like cookies and cream ice cream. Kids - big and small - are going to love these!

Ingredients

  • 1 box red velvet cake mix
  • 3 eggs
  • 1/2 cup oil
  • 1 cup sour cream
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 24 Oreo cookies
  • OREO CREAM CHEESE FROSTING
  • 10 Oreo's, twist and scrape off (or eat) the cream filling
  • 1/2 cup butter, softened
  • 8 oz. cream cheese (room temp)
  • 2 teaspoons vanilla extract
  • 4 cups powdered sugar

If you follow Wendy's directions you will only have 2 Oreos left for topping the cupcakes. If you want cookie crumbs on top, either put less in the frosting or have extra cookies on hand.
  • Step 1
    Preheat oven to 350 degrees and line pans with cupcake liners.
  • Step 2
    Sift cake mix into a small bowl and set aside.
  • Step 3
    In a large bowl, combine eggs, oil, sour cream, milk and vanilla extract until smooth
  • Step 4
    Stir in cake mix into wet mix, mixing well.
  • Step 5
    Take your Oreo's and place one at the bottom of each cupcake liner.
  • Step 6
    Scoop batter over each Oreo to fill the liners about 3/4 full.
  • Step 7
    Bake for 15-20 minutes or until an inserted knife comes out clean. Let cool.
  • Step 8
    While those are cooking, take your Oreo cookies (just the chocolate pieces and not the filling) and crush in a plastic bag using a rolling pin.
  • Step 9
    In a medium bowl beat butter and cream cheese together. Add vanilla extract and slowly add powdered sugar 1 cup at a time beating to make smooth.
  • Step 10
    When you have that all mixed sift your crushed Oreos into the mixture. Any broken up chunks left in the sifter put aside.
  • Step 11
    Pipe onto cooled cupcakes.
  • Step 12
    Top with extra Oreos sprinkle chunks you set aside.
