This recipe belongs to a friend who got it from her mother. She said she always kept one in the freezer for emergencies. Never hurts!

boiling water
1 c
quick oats
1 1/2 c
flour(self rising)
1 tsp
cinnamon
1 c
brown sugar
1 c
regular sugar

eggs
1/2 c
vegetable oil

TOPPING

1/2 c
sugar
1 c
pet milk
1 stick
margarine or butter
1 tsp
vanilla
1
egg
1/2 c
chopped pecans
1/2 c
shredded coconut

How to Make OATMEAL CAKE

Step-by-Step

  • 1POUR BOILING WATER OVER OATS AND LET STAND WHILE MIXING THE FOLLOWING: SIFT TOGETHER FLOUR, CINNAMON; ADD SUGARS, EGGS & OIL. THEN ADD OATMEAL MIXTURE.
  • 2MIX WELL AND PUT IN GREASED 8 x 12 PAN AND BAKE AT 350 FOR 30 TO 40 MINUTES
  • 3TOPPING: BOIL TOGETHER 1/2 C. SUGAR, 1 C. PET MILK, 1 STICK MARGARINE, 1 tsp VANILLA, 1 EGG, 1/2 C.COCONUT, 1/2 C. PECANS. COOK UNTIL AT PUDDING CONSISTENCY AND POUR OVER WARM CAKE. GOOD WARM OR COLD. FREEZES WELL TOO.
