i created these cup cakes from bits and pieces of 3 different recipes. I love chocolate mud cake. I combined mud cake with a cherry cheese filling,and topped them with a cream cheese whipped cream frosting. The combination is delicious. I hope you all enjoy my new creation.

Ingredients
- MUD CAKE NOTE: YOU MAY SUBSTITUTE HOMEMADE CAKE WITH A CHOCOLATE FUDGE BOX CAKE MIX. ADD 2 TEASPOONS OF INSTANT COFFEE TO THE CAKE MIX. SUBSTITUTE MILK FOR THE WATER ON THE BOX CAKE MIX. ADD AN EXTRA EGG YOLK TO THE AMOUNT OF EGGS THE MIX CALLS FOR
- MUD CAKE
- 2 - 3.5 ounce dark chocolate bars i used ghirardelli 60 percent cacao
- 1 cup unsalted butter plus 1 1/2 tablespoons
- 1 cup caster sugar fine sugar( make your own. place about 1 1/2 ups of granulated sugar in a food processor. pulse until sugar becomes fine not powder. it takes about 3 minutes)
- 1 tablespoon instant coffee
- 1 1/3 cups warm water
- 1 1/2 cups self rising flour
- 1/4 cup unsweetened cocoa powder
- 2 - eggs
- 1 teaspoon vanilla extract
- FILLING
- 12 ounces cream cheese -1 1/2 packages
- 4 tablespoons granulated sugar
- 2 - small eggs or 1 1/2 large eggs lightly beaten
- 21 ounces can of cherry pie filling
- WHIPPED FROSTING
- 1 cup confection (powdered sugar)
- 4 ounces cream cheese
- 1 teaspoon vanilla
- 1 1/2 cups heavy cream or whipping cream
- 1 dash salt

Step 1line cupcake tins with liners. preheat oven to 300 degree's F

Step 2/in a sauce pan combine chopped butter,chopped dark chocolate,water,and instant coffee. Heat and stir until melted together. Remove from heat to cool.

Step 3make cream cheese filling while it is cooling. Beat softened cream cheese with sugar and eggs,and set aside.

Step 4after chocolate mixture has cooled. Empty it in to a large bowl. add the sugar to mixture,and beat on low speed until sugar is dissolved. Sift the flour and cocoa powder in to the mixture. Beat on low until well incorporated.

Step 5slightly beat the eggs. add to the mixture with the vanilla,and beat on low for one minute. place some batter in to each cup cake liner about 1/3 of the way up each.

Step 6top batter with 1 tablespoon of cheese mixture,and cherry pie filling. Top off cheese mixture with cake batter almost all the way up to top from the top of liner. leave about 1/4 inch of liner not filled.

Step 7bake in 300 degree F oven for about 40 minutes. tops will crack a bit. cool completely. make frosting.

Step 8beat cream cheese vanilla and powdered sugar together. in a separate bowl beat cream until stiff peaks form. Fold cream in to cheese mixture until combined.

Step 9Frost cup cakes,and top with some left over cherry pie filling. Serve and enjoy! Refrigerate cakes.
