This cake is really easy. I made it for Oxi Day - Mar 25th for my mother is law who is fasting for Lent, but you'll enjoy this anytime. Didn't have any cognac so I just used extra orange juice. The glace ingredients are actually doubled because I want plenty!! Enjoy !

Ingredients

  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 3/4 cup orange juice, fresh
  • 1 tablespoon grated orange rind
  • 1/4 cup cognac
  • 3 cups self rising flour
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1 teaspoon baking soda
  • 11/2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • GLACE
  • 2 cups caster sugar
  • 2 teaspoons grated orange rind
  • 2 tablespoons fresh orange juice

How To Make nistisimo cake (during lent or whenever you like!!

  • Step 1
    Pre-heat oven 180 degrees. Beat sugar and oil. Add orange rind, orange juice and cognac.
  • Step 2
    In a seperate bowl mix flour, cinnamon, baking soda and cloves. Add to oil mixture. Beat on medium speed, mixture will be thick. Fold in walnuts and raisins.
  • Step 3
    Bake in a well greased/floured cake tin for 45-5o minutes depending on your oven. Test for doneness with toothpick.
  • Step 4
    While the cake is baking make the glace. Beat caster sugar, orange rind and orange juice. Remove cake and let cool slightly. While still warm pour icing all over. When it cools completely it will form a sweet crust.
