~ my skinny pineapple / coconut angel cake ~

I tweaked a cake recipe out of my cookbook, to my liking. This is what I have when wanting something sweet on my diet. Angel Food cake has always been my favorite, so to me it's wonderful. Love the combo of pineapple and coconut. Enjoy!

Ingredients

  • 1 - 16 ounces box, angel food cake
  • 1 - 20 ounces can, undrained crushed pineapple
  • 1 1/2 - 2 teaspoons coconut extract
  • 1/2 cup coconut flakes
  • light - whipped cream

How To Make ~ my skinny pineapple / coconut angel cake ~

  • Step 1
    Preheat oven to 350 degree F. In a bowl, mix thoroughly the cake mix, pineapple and its juice, coconut and extract.
  • Step 2
    Pour evenly into a 9 x 13 baking dish. Bake for 25 - 30 minutes or until pick comes out clean.
  • Step 3
    Cool and spread with light whipped cream or your favorite topping. I usually add the whipped cream o individual servings. Top with some toasted coconut. Enjoy!
