I've had this recipe along time. This moist cake tastes even more wonderful after a few days to let the flavors come together. I love the fluffy cream cheese frosting on this cake.

Ingredients

    sugar
  • 1 c
    vegetable oil
  • 3
    eggs
  • 1 c
    pineapple, drained
  • 3 c
    all purpose flour, sifted
  • 2 tsp
    baking powder
  • 1 tsp
    baking soda
  • 1 tsp
    salt
  • 2 tsp
    cinnamon, ground
  • 1/2 tsp
    allspice, ground
  • 1 tsp
    pure vanilla extract
  • 2 c
    carrots, grated
  • 1 c
    walnuts, chopped
  • FROSTING

  • 2 1/2 c
    confectioners sugar
  • 1/2 stick
    butter, softened
  • 1/4 c
    cream cheese, softened
  • 1 tsp
    vanilla extract
  • 1 to 2 Tbsp
    half & half, as needed

How to Make My 13x9 Carrot Cake with Fluffy Frosting

Step-by-Step

  1. Preheat oven to 350. In a standard mixer, blend your sugar, oil, eggs, and pineapple together.
  2. Then sift your flour, baking powder, baking soda, salt, cinnamon, allspice altogether. Add the flour mixture slowly to pineapple mixture until blended. Then add vanilla, carrots, and walnuts.
  3. Pour batter into a sprayed 13x9 baking dish. Bake one hour or until cake tests done in the center. Remove from oven and let cool one hour.
  4. Frosting-In your mixer blend the confectioners sugar, butter, cream cheese, and half & half plus the vanilla. Mix on medium speed until creamy scraping sides once or twice. Then spread evenly over top of cooled cake. Enjoy!
