my 13x9 carrot cake with fluffy frosting
I've had this recipe along time. This moist cake tastes even more wonderful after a few days to let the flavors come together. I love the fluffy cream cheese frosting on this cake.

Ingredients
- 2 cups sugar
- 1 cup vegetable oil
- 3 - eggs
- 1 cup pineapple, drained
- 3 cups all purpose flour, sifted
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 teaspoons cinnamon, ground
- 1/2 teaspoon allspice, ground
- 1 teaspoon pure vanilla extract
- 2 cups carrots, grated
- 1 cup walnuts, chopped
- FROSTING
- 2 1/2 cups confectioners sugar
- 1/2 stick butter, softened
- 1/4 cup cream cheese, softened
- 1 teaspoon vanilla extract
- 1 to 2 tablespoons half & half, as needed
How To Make my 13x9 carrot cake with fluffy frosting

Step 1Preheat oven to 350. In a standard mixer, blend your sugar, oil, eggs, and pineapple together.

Step 2Then sift your flour, baking powder, baking soda, salt, cinnamon, allspice altogether. Add the flour mixture slowly to pineapple mixture until blended. Then add vanilla, carrots, and walnuts.

Step 3Pour batter into a sprayed 13x9 baking dish. Bake one hour or until cake tests done in the center. Remove from oven and let cool one hour.

Step 4Frosting-In your mixer blend the confectioners sugar, butter, cream cheese, and half & half plus the vanilla. Mix on medium speed until creamy scraping sides once or twice. Then spread evenly over top of cooled cake. Enjoy!
