my 13x9 carrot cake with fluffy frosting

I've had this recipe along time. This moist cake tastes even more wonderful after a few days to let the flavors come together. I love the fluffy cream cheese frosting on this cake.

Ingredients

  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 - eggs
  • 1 cup pineapple, drained
  • 3 cups all purpose flour, sifted
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons cinnamon, ground
  • 1/2 teaspoon allspice, ground
  • 1 teaspoon pure vanilla extract
  • 2 cups carrots, grated
  • 1 cup walnuts, chopped
  • FROSTING
  • 2 1/2 cups confectioners sugar
  • 1/2 stick butter, softened
  • 1/4 cup cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons half & half, as needed

How To Make my 13x9 carrot cake with fluffy frosting

  • Step 1
    Preheat oven to 350. In a standard mixer, blend your sugar, oil, eggs, and pineapple together.
  • Step 2
    Then sift your flour, baking powder, baking soda, salt, cinnamon, allspice altogether. Add the flour mixture slowly to pineapple mixture until blended. Then add vanilla, carrots, and walnuts.
  • Step 3
    Pour batter into a sprayed 13x9 baking dish. Bake one hour or until cake tests done in the center. Remove from oven and let cool one hour.
  • Step 4
    Frosting-In your mixer blend the confectioners sugar, butter, cream cheese, and half & half plus the vanilla. Mix on medium speed until creamy scraping sides once or twice. Then spread evenly over top of cooled cake. Enjoy!
