Ingredients
- 1 1/2 cups canola oil
- 2 1/2 cups sugar
- 3 - eggs
- 3 cups flour (all purpose) or 2 cups ap flour and 1 cup oat flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 cup buttermilk
- 2 - ripe bananas mashed
- 3/4 cup blueberries, frozen or fresh
- 1 1/2 teaspoons vanilla
- 1 cup pecans , chopped, optional
How To Make blueberry banana cake

Step 1Spray and flour cake baker. I used a bundt, but you could also do cupcakes, (will make 24), or make it in a loaf pan. It will take 2 loaf pans.

Step 2In mixing bowl combine oil, sugar, eggs

Step 3In separate bowl sift together flour, baking soda, salt

Step 4Add buttermilk and flour mixture to oil mixture. Alternating 1/2 buttermilk then 1/2 flour mixture.

Step 5Fold in bananas

Step 6Add vanilla

Step 7Toss blueberries with 1 tablespoon flour then fold into batter.

Step 8Bake on 350* for 35-40 minutes (for bundt) or until a cake tester comes out clean.
