Ingredients

  • 1 1/2 cups canola oil
  • 2 1/2 cups sugar
  • 3 - eggs
  • 3 cups flour (all purpose) or 2 cups ap flour and 1 cup oat flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 cup buttermilk
  • 2 - ripe bananas mashed
  • 3/4 cup blueberries, frozen or fresh
  • 1 1/2 teaspoons vanilla
  • 1 cup pecans , chopped, optional

How To Make blueberry banana cake

  • Step 1
    Spray and flour cake baker. I used a bundt, but you could also do cupcakes, (will make 24), or make it in a loaf pan. It will take 2 loaf pans.
  • Step 2
    In mixing bowl combine oil, sugar, eggs
  • Step 3
    In separate bowl sift together flour, baking soda, salt
  • Step 4
    Add buttermilk and flour mixture to oil mixture. Alternating 1/2 buttermilk then 1/2 flour mixture.
  • Step 5
    Fold in bananas
  • Step 6
    Add vanilla
  • Step 7
    Toss blueberries with 1 tablespoon flour then fold into batter.
  • Step 8
    Bake on 350* for 35-40 minutes (for bundt) or until a cake tester comes out clean.
