moms oatmeal cake my way

The original recipe called for the topping to be broiled, but I wanted to do some thing a little different, and I really like the way it turned out so wanted to share with you. I don't double the topping recipe.

Ingredients

  • 1 cup quick oatmeal
  • 1 cup brown sugar, firmly packed
  • 1 clove white sugar
  • 1 1/3 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • TOPPING
  • 1 cup nuts
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 6 tablespoons butter--melted
  • 1 cup coconut
  • 1/4 cup cream ( i use canned milk)
  • 1 teaspoon vanilla extract

How To Make moms oatmeal cake my way

  • Step 1
    Turn oven on 350* Grease and flour a 9 x 13 pan Put all ingredients in mixer bowl and mix together.
  • Step 2
    These were not put in the recipe but must be added. Add 1/2 cup butter or margarine, 2 eggs and 1 1/2 cup boiling water---this will be very thin batter.
  • Step 3
    Mix up the topping and drop into the batter with a tablespoon. leaving a space in between. when you have the topping all in the batter, put in oven and bake for 60 min. This is a great cake and each serving will have a bit of the topping in each one. It doesn't need to be frosted but you could serve with cool whip or Ice Cream.
