Ingredients
- 2 cups sugar
- 1 1/2 cups oil
- 3 - eggs
- 1 teaspoon vanilla
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 2 3/4 cups grated carrots
- 5 tablespoons hot water
- 1/2 cup chopped walnuts (optional)
How To Make moms carrot cake

Step 1Mix the first 4 ingredients; it will be thick. Mix all dry ingredients and gradually add to batter. If using self rising flour, only add the baking soda. Mix together; fold in grated carrots and walnuts (optional). Add water; mix well. Bake at 350 for 55 to 60 minutes, depending on what type of pan you use; I like the bunt pan. Let cool and frost with cream cheese frosting.
