Ingredients
- 1 package (18 ounce) yellow or white cake mix
- 1/2 cup oil
- 4 - eggs
- 1 can (11 ounce) mandarin oranges in juice, pureed
- 3 tablespoons lime juice
- 1/2 cup raisins or craisins (optional)
- FROSTING
- 1 package (8 ounce) cream cheese, softened
- 1/2 cup butter, softened
- 3 cups powdered sugar, sifted
- 2 tablespoons pureed mandarin oranges
How To Make moist mandarin orange cake

Step 1Using a food processor or blender, puree mandarin oranges (with juice) and lime juice and measure 1 cup pureed mandarin orange for the cake.

Step 2Place cake mix, oil, eggs, 1 cup pureed mandarin orange in a large mixing bowl. Beat using an electric mixer and start with low speed and increase to medium speed to blend well. Fold in raisins or craisins.

Step 3Pour into 2 greased and floured 9 inch layer cake pans and bake at 350 degrees for 30 minutes. Cool.

Step 4Frosting: In a large mixing bowl, using an electric mixer, blend together cream cheese and butter. Add powdered sugar, a little at a time, blending well on low speed. Then slowly mix in pureed mandarin orange and blend until smooth. Frost cake.
