My Meema made the absolute best Cheesecake in the world. It was a given that at every party and family gathering Meema would bring her Cheesecake. After she passed my Dad said that he wished that someone had gotten the recipe to Meema's Cheesecake. At any rate I told him someone had the recipe. He asked who and I said me. He asked me to give it to my Mom and I said I couldn't because Meema never measured anything, the sign of a true country cook. Over the years I have figured out the measurements and here is the recipe. By the way, I still won't give the recipe to my Mom.

Ingredients

  • CRUST
  • 16 to18 - graham crackers, crushed to fine crumbs
  • 4 tablespoons butter
  • 4 tablespoons sugar
  • CHEESECAKE
  • 2 (8) ounces packages cream cheese, at room tempature
  • 4 large eggs, at room tempature
  • 1 cup sugar
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons fresh lemon juice
  • TOPPING
  • 1 pint sour cream
  • 6 teaspoons sugar
  • 6 teaspoons pure vanilla extract

How To Make meema's secret cheesecake

  • Step 1
    Preheat the oven to 350 degrees. Grease a spring form pan with butter. Wrap the bottom of the pan with heavy duty foil, to prevent leaking.
  • Step 2
    CRUST: Mix cracker crumbs with butter and sugar and press in bottom and up sides of prepared pan.
  • Step 3
    CHEESECAKE: Beat the cream cheese until easy to mix.
  • Step 4
    Add 1 egg at a time beating well between each egg.
  • Step 5
    Continue to beat as you add the sugar, vanilla and lemon juice.
  • Step 6
    Pour over the graham cracker crust. smooth the top and Bake in a water bath for 55 minutes to 1 hour or just until set. Cool completely and refrigerate for 3 to 4 hours. NOTE: OVER BAKING WILL CAUSE THE CHEESECAKE TO CRACK.
  • Step 7
    TOPPING: Mix the ingredients and spread over chilled cheesecake. Chill until set.
