1 boxwhite cake mix [no pudding in the mix]

1 Tbspbaking powder

1 ccake flour

1/8 tspsalt

1/4 csugar, white

1 can(10 oz) can frozen margarita mix, thawed [undiluted]

3 lgegg whites
-
1 tsppure vanilla extract
-
3 Tbspvegetable oil

1 Tbspgrated lime zest
-
1/4 cwater
-
3 Tbsptequila
- TEQUILA MIXTURE

1/4 cpowder sugar
-
2 Tbspkey lime juice
-
2 Tbsptequila
- ICING
-
1 sticksweet butter, unsalted, softened

8 oz1 package cream cheese, softened

1 Tbsplemon juice
-
2 Tbspkey lime juice
-
1 tspkey lime zest or 1 tsp lemon zest

4-5 cconfectioners' sugar

3 Tbsptequila
-
1 tspelectric green gel food color

1/4 ccoarse white sugar or shite decorator sugar crystals

24 slicethin lime slices [about 3 whole limes]

How To Make margarita cupcakes for the holidays

1In large bowl, first place butter in empty bowl. Add cake mix, baking flour, baking powder, salt, sugar. Stir lightly until incorporated. No more than 1-2 minutes. Add {entire can} of Margarita mix, egg whites and vegetable oil, water, vanilla using electric mixer.

2Stir in Tequila and lime zest; mix completely

3Fill prepared pans 2/3 full.

4Bake according to box directions (350 degrees - be sure to check box!) Bake 22-24 minutes or until toothpick inserted in center of cupcake comes out clean.

5Cool in pan on cooling rack 8-10 minutes

6Tequila Mix. In a small bowl, mix together 2-4 tbsp of tequila. lime juice and powder sugar until smooth. Mixture should be thinly in density.

7Brush tops of cupcakes lightly with tequila mix.

8Cool completely. Remove cupcakes from pan.

9FOR ICING: In a medium bowl, cream butter, cream cheese, lime juice and zest with electric mixer until light and fluffy.

10Add 4 cups confectioners' sugar, one cup at a time; continue beating until light and fluffy. If icing is too thin add additional confectioners' sugar 1 tablespoon at a time. Add food color until blended.

11Add tequila. 1 tblsp at a time.

12Frost cupcakes. Sprinkle sugar on small plate; roll edges of cupcakes in sugar. Cut small slit in lime slices; twist and place on cupcakes

13Garnish, if desired, with lime zest, an additional sprinkling of salt and a lime wedge.

14Poke 1 umbrella into each cupcake. Store loosely covered in refrigerator.

15Of course, use Tequila responsibly. It's your preference on the amounts of Tequila to use, so measure accordingly.
