My Fathers 75th Birthday. He loves lemon and pineapple. This ones for Papa! I wanted to make cake and a friend suggested lemon meringue pie. Well I combined. So good I actually woke up in the middle of the night to sneak a piece!

Ingredients
- 1 - yellow cake mix plus ingredients minus cup water
- 1 cup banana yogurt
- 1 box lemon pudding pie filling mix 3.75oz
- 2 - egg yolks
- 1/2 cup sugar
- 2 1/4 cups water
- 1 - container cool whip
- 1/2 cup crushed pineapple drained
- 1/2-1 cup crushed vanilla sandwich cookies or graham crackers
How To Make lemon meringue pie cake

Step 1Mix cake ingredients minus cup of water, add banana yogurt and bake till toothpick comes out clean. cool completely.

Step 2In a pan add lemon mix, sugar and 1/4 water, turn heat on medium. Now add egg yolks and two cups of water wisking till comes to a rapid boil. take off heat and cool to room temp. Stiring good every few minutes.

Step 3Poke large holes (with bottom wooden spoon) in cooled cake and pour lemon mix over cake. Refrigerate for and hour. Fold pineapple into cool whip and top cake with. Top with crushed cookies for the pie crust. Keep refrigerated.
