lemon curd poke cake
This cake is very refreshing and lemon flavor is so fresh. If you like to tone down the flavor you can use half lemon juice and half water. I personally love the fresh taste. When I close my eyes I taste like I just tasted a lemon merengue pie. Perfect cake for Spring. This is my first for posting a recipe, so I think it is a nice one after such a long winter.

Ingredients
- 1 box lemon cake mix, made according to directions
- LEMON CURD RECIPE
- 1 cup fresh squeeze lemon juice
- 1 cup sugar
- 3 tablespoons corn startch
- 1 pinch salt
- TOPPING
- 8 ounces whip topping
How To Make lemon curd poke cake

Step 1Make cake according to directions on box. Bake in a 13x9 cake pan. When done poke holes with back of wooden spoon. Cool.

Step 2While cake is baking, Combine sugar, cornstarch and salt in a saucepan. Add lemon juice and cook on medium heat until thickens. Remove from heat

Step 3Pour the lemon curd over poked cake and smooth over so holes fill. Allow to cool completely.

Step 4When cooled completely top with whipped topping. Store in refrigerator.
