I combined elements from a few different recipes and came up with this- success!

Ingredients
- LEMON SUGAR TOPPING
- 1 1/2 teaspoons lemon zest, grated
- 1/2 cup sugar
- MUFFINS
- 2 cups plain flour (250g)
- 2 tablespoons baking powder
- 1 teaspoon salt
- 2 cups sugar (250g)
- 8 tablespoons butter (110g)
- 1 1/2 teaspoons vanilla extract
- 1/2 cup milk
- 1 1/2 teaspoons lemon zest, grated
- 1 tablespoon lemon juice
- 1 1/2 cups blueberries
How To Make lemon blueberry muffins

Step 1For the topping: mix lemon zest and sugar together, set aside

Step 2For the muffins: Preheat oven to 425 (180c fan assisted) Sift flour, baking powder and salt together Cream butter and sugar together Stir in eggs, vanilla, milk, lemon juice, zest and blueberries Add half of dry ingredients to wet ingredient and stir Add second half of dry ingredients until just moist - do not over mix

Step 3Fill paper lined muffin cups 3/4 full Sprinkle lemon sugar topping on muffins and bake for 25-30 minutes Check if they are done by doing toothpick test
