Ingredients

LEMON SUGAR TOPPING

1 1/2 tsplemon zest, grated

1/2 csugar
-
MUFFINS
-
2 cplain flour (250g)

2 Tbspbaking powder
-
1 tspsalt
-
2 csugar (250g)
-
8 Tbspbutter (110g)

1 1/2 tspvanilla extract
-
1/2 cmilk
-
1 1/2 tsplemon zest, grated

1 Tbsplemon juice

1 1/2 cblueberries
How to Make Lemon blueberry muffins
- For the topping:
mix lemon zest and sugar together, set aside - For the muffins:
Preheat oven to 425 (180c fan assisted)
Sift flour, baking powder and salt together
Cream butter and sugar together
Stir in eggs, vanilla, milk, lemon juice, zest and blueberries
Add half of dry ingredients to wet ingredient and stir
Add second half of dry ingredients until just moist - do not over mix - Fill paper lined muffin cups 3/4 full
Sprinkle lemon sugar topping on muffins and bake for 25-30 minutes
Check if they are done by doing toothpick test
