humble spice cake
This dense, whole wheat cake was made for my Father-In-Law on Father's Day. I was out of regular flour, didn't have brown sugar, and decided to wing it. We were all very pleased with the results.

Ingredients
- CAKE BATTER
- 2 cups whole wheat flour
- 1 3/4 cups sugar
- 1 1/2 teaspoons cinnamon
- 1 teaspoon fresh ground cloves
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ground ginger
- 3/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup chopped walnuts or pecans (optional)
- 3/4 cup butter flavor shortening
- 1/2 cup applesauce, unsweetened
- 1 cup buttermilk
- 1/2 cup molasses
- 3 - eggs, plus one egg yolk
- 1 teaspoon almond extract
- CREAM CHEESE FROSTING
- 1 package cream cheese 8 oz, softened
- 1/2 cup room temperature butter
- 4-5 cups powdered sugar
- 2 tablespoons milk
How To Make humble spice cake

Step 1Combine all dry ingredients in a separate bowl.

Step 2In mixing bowl combine shortening, buttermilk, molasses, eggs, applesauce, and almond extract. If you are adding nuts, do so now.

Step 3Add dry ingredients to mixing bowl. Mix till medium, but try to mix quickly as leavening begins as soon as buttermilk and baking soda/powders combine. Pour batter into a 9 X 13 greased glass cake pan/dish/thing. Bake for 30-35 minutes. Done when toothpick inserted in center comes out clean. Let cool. Frost.

Step 4FROSTING Mix butter and cream cheese on high with mixer, lower speed, add powdered sugar, use milk to achieve desired consistency. Whip on high for 3-4 minutes. Frost cake when it is cool.

Step 5Some people in my family don't like nuts, so instead of putting them in the cake, I press the chopped nuts into the frosted sides of half the cake.
