Ingredients

  • 1 c
    flour
  • 1/2 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/4 c
    unsalted butter, softened
  • 2/3 c
    sugar
  • 1-1/2 Tbsp
    sugar, divided
  • 1/2 tsp
    vanilla
  • 1 large
    egg
  • 1/2 c
    buttermilk
  • 1 c
    raspberries

How to Make Homemade raspberry cake

Step-by-Step

  1. Heat oven to 400. Lightly spray a 9" cake pan w/ cooking spray. In bowl, whisk together flour, baking powder and baking soda, ( you can add a pinch of salt too.)
  2. In another bowl, beat butter and 2/3 cup sugar until fluffy. Beat in vanilla and egg. Beat in flour mis, alternating w/ buttermilk.
  3. Spoon batter into pan. Sprinkle top w/ raspberries and remaining sugar. Bake 25 mins, or until a toothpick inserted in center comes out clean. Great served w/ a dollop of whipped cream.
