grandma murray's carrot cake
My husband's, Mark, favorite birthday cake for years was Carrot Cake. This is his mom's recipe. As far as carrot cakes go, this is a pretty easy recipe to make and follow. The cake is always moist and delicious. I always frost it with lots of cream cheese frosting.

Ingredients
- 3 large eggs
- 3 cups sugar
- 1 cup canola oil
- 3 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 3 teaspoons ground cinnamon
- 2 cups shredded carrots
- 1 cup chopped walnuts (vey necessary)
- 8 ounces can undrained crushed pineapple
- 2 teaspoons vanilla
How To Make grandma murray's carrot cake

Step 1In a large mixing bowl, mix all ingredients together until well combined. Spoon into 2 greased 8-inch round cake pans or one greased 13x9x2-inch cake pan or 2 greased loaf pans.

Step 2Bake in a 375 degree oven for 1 hour, 10 minutes (if using round pans or cake pan, time will be less so check with a cake tester or tooth pick after 25 to 30 minutes). Cake is done when tester comes out clean.

Step 3Cool cake/loafs on wire rack for 10 minutes. Release cake/loaf from pan and cool completely. When cake is cool, frost with your favorite Cream Cheese frosting.
