These brownies are gluten free and hands down the best brownie I have ever tasted. They are both fudgey and Cakey - the perfect combination!

Ingredients

1/2 c
brown or white rice flour
1/4 c
combined of potato starch & tapioca starch
1 tsp
baking powder
1/2 tsp
salt
1/4 tsp
xanthan gum
3/4 c
dutch cocoa powder
1/2 c
butter
3 large
eggs
1 1/2 c
sugar
2 tsp
pure vanilla extract
1 1/4 c
chocolate chips, optional

How to Make Fudgey AND Cakey Brownies!

Step-by-Step

  • 1Combine first 5 ingredients in a bowl and set aside.
  • 2Melt butter and sugar together on the stove or in a microwave safe bowl for 30 second intervals - stirring each time.
  • 3Using a clean bowl, pour sugar and butter combination into bowl and mix with cocoa powder followed by the 3 eggs and vanilla extract.
  • 4Stir in all your dry ingredients. Mix in chocolate chips by hand - if using them.
  • 5Preheat oven to 350 degrees. Spray an 8x8 square pan with cooking spray. Pour the rich brownie batter into the pan spreading the batter evenly throughout.
  • 6Bake at 350 degrees for 30-32 mins. A toothpick inserted into the center of the brownies should come out a little wet.
    Let brownies cool completely in pan before cutting.
