fantastic orange cupcakes w/ buttercream frosting

I doctored up an old recipe of mine, for the cupcakes and used a butter cream recipe for the frosting. Enjoy!

Ingredients

  • 1 - 16.5 ounces package duncan heinz orange deluxe cake mix
  • 1 - 8 ounces cream cheese, softened
  • 1/2 cup water
  • 1/2 cup vegetable oil
  • 4 - eggs
  • 1 tablespoon vanilla or for more orange flavoring, use 1/2 orange extract
  • FROSTING
  • 1 cup softened, butter
  • 3 cups confectioners' sugar
  • 2 teaspoons vanilla
  • 1 OR 2 - drops red & yellow food coloring- if you desire orange frosting like i made
  • orange - extract to taste

How To Make fantastic orange cupcakes w/ buttercream frosting

  • Step 1
    Preheat oven to 350 degree F. Prepare muffin pan with paper liners or I used silicone cupcake liners. Set aside.
  • Step 2
    In a large mixing bowl, add all cake ingredients and beat well. Scrape sides of bowl, make sure all is well incorporated.
  • Step 3
    Fill each cupcake liner 2/3 full.
  • Step 4
    Place in oven and bake 20 - 25 minutes or until pick comes out clean.
  • Step 5
    Frosting: Beat butter until nice and fluffy - slowly beat in the confectioners' sugar a little at a time. Beat in vanilla or orange extract & food coloring if using. Frost cooled cupcakes.
  • Step 6
    Enjoy! They are a deliciously moist cupcakes and the frosting is yummy!
