egg nog muffins
These are always well recieved by family and guests...great way to use up the egg nog. Note: Other items can be added to the batter, like mini chocolate chips, ground macadamian nuts,,etc..

Ingredients
- 2 cups rich egg nog
- 1/2 teaspoon rum liquor or extract,your choice
- 1 1/2 cups self-rising flour
- STREUSEL TOPPING:
- 1/3 cup all purpose flour
- 1/3 cup granulated sugar
- 1/2 teaspoon ground nutmeg
- 2 tablespoons very cold butter
How To Make egg nog muffins

Step 1Heat oven to 350^. Line a 12- cup tin with foil inserts and spray the insides. In a small bowl add the egg nog ,rum, and whisk in the self-rising flour. Use a cookie scoop to portion into each cup. Set aside.

Step 2Strusel topping: Combine the flour, sugar and nutmeg. Cut in the cold butter until small pea size crumbs are formed.

Step 3Sprinkle evenly on top of each muffin cup. Bake 18-20 minutes, or until tested done with a tooth pick.
