ed's sweet potato bars

This is another recipe of Ed's ,he says when he sees a pumpkin recipe,he likes to substitute sweet potatoes because he LOVES them. He says these are moist and delicious. He says since he started cooking with the Kitchen caterers he finds himself looking at cookbooks more often and trying dishes at home. (His wife loves that!)

Ingredients

  • - 4 eggs
  • - 1 2/3 c sugar
  • - 1 c oil
  • - 2 c cooked,mashed sweet potatoes
  • - 2 c flour
  • - 2 t. ground cinnamon
  • - 2 t. baking powder
  • - 1 t. baking soda
  • - 1 t. salt
  • ICING:
  • - 6 oz cream cheese,softened
  • - 2 c powdered sugar
  • - 1/4 c butter,softened
  • - 1 t. vanilla
  • - 1/8 t. ground cinnamon
  • - 1-2 tablespoons milk

How To Make ed's sweet potato bars

  • Step 1
    In a bowl, beat the eggs, sugar, oil and sweet potato until well blended. Combine the flour, cinnamon, baking powder, baking soda and salt; gradually add to sweet potato mixture and mix well. Pour into an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake at 350° for 25-30 minutes or until set. Cool completely.
  • Step 2
    For icing, beat the cream cheese, confectioners' sugar, butter,cinnamon and vanilla in a small bowl. Add enough milk to make spreading consistency. Spread over bars. Store leftovers in the refrigerator.
