easiest apple cake
When I take this cake to Church, I have to make two, as everyone always fights over the last piece...so I learned my lesson long ago...double the pleasure works best...enjoy!

Ingredients
- 2 cups sugar
- 1 cup oil
- 3 - eggs
- 2 teaspoons vanilla extract
- 3 cups peeled and cubed apples - i use granny smith
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 2 cups flour
- handful - chopped pecans - optional
- SAUCE
- 1/2 cup unsalted butter
- 1 cup brown sugar, packed
- 1/3 cup heavy cream or milk
How To Make easiest apple cake

Step 1Preheat your oven to 350 degree F. In a large bowl, beat sugar, oil, vanilla and eggs until well blended..I do this all by hand with a whisk.

Step 2Add the flour, salt, baking soda and cinnamon. Beat until well blended ( batter will be thick.)

Step 3Fold in nuts and apple.

Step 4Spray a 9 x 13 baking pan or dish with bakers secret or grease and flour. Spread batter into pan evenly. Bake for 55 - 60 minutes. Cool completely.

Step 5Make caramel glaze: In a saucepan, add butter, brown sugar, cream or milk. Cook over medium heat, stir continuously, until the mixture comes to a boil. DO NOT stir for 3 - 3 1/2 minutes. Remove from the heat and spread over the top of the cake. ( I line a cookie sheet with foil and remove my cake, for easier serving and so the caramel can run down the sides.) Leave the cake sit for at least an hour before serving.
