deep chocolate zucchini cake
This is my husband favorite as the zucchini start taking over the garden it's time to enjoy this cake..

Ingredients
- 2 1/2 cups all purpose flour
- 1/4 cup cocoa, unsweetened
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup greek yogurt
- 1 teaspoon balsamic vinegar
- 1/2 cup butter
- 1 1/2 cups sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups zucchini grated
- 1 cup chocolate chips
- 1/2 cup dry cherries
How To Make deep chocolate zucchini cake

Step 1Combine flour, cocoa powder, baking soda, and baking powder in a bowl.

Step 2Mix the yogurt and vinegar in a large bowl. Let stand for 5 minutes to sour the yogurt. Beat in the butter, sugar, vegetable oil, eggs, and vanilla extract.

Step 3Stir the liquid ingredients into the flour mixture until just combined. Fold in the zucchini and dry cherries.

Step 4Pour batter into the prepared pan, and sprinkle with chocolate chips.

Step 5Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack. We leave in the pans and eat with out frosting but a cream cheese frosting or whip cream would be good toppings... This cake reheats well..
