cocoa, unsweetened
1 tsp
baking soda
1/2 tsp
baking powder
1/2 c
greek yogurt
1 tsp
balsamic vinegar
1/2 c
1 1/2 c
1/2 c
vegetable oil
2 large
2 tsp
vanilla extract
2 c
zucchini grated
1 c
chocolate chips
1/2 c
dry cherries

How to Make Deep Chocolate Zucchini Cake


  • 1Combine flour, cocoa powder, baking soda, and baking powder in a bowl.
  • 2Mix the yogurt and vinegar in a large bowl. Let stand for 5 minutes to sour the yogurt. Beat in the butter, sugar, vegetable oil, eggs, and vanilla extract.
  • 3Stir the liquid ingredients into the flour mixture until just combined. Fold in the zucchini and dry cherries.
  • 4Pour batter into the prepared pan, and sprinkle with chocolate chips.
  • 5Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
    We leave in the pans and eat with out frosting but a cream cheese frosting or whip cream would be good toppings... This cake reheats well..
