danish pudding bundt cake
This has been in my "Special Cake and Desserts" recipe box for years I like to make for special occasions and holidays. The dates and orange juice flavors make it taste pretty special. To save time use pre sliced packaged dates and orange rind from the spice section in the grocery. If slicing your own dates, it helps to keep dipping your knife in water to prevent from stickiness building up.

Ingredients
- 1 cup butter
- 1 cup buttermilk
- 3 - eggs
- 2 cups sugar
- 3 cups flour
- - 1 1/2 tsp. soda
- 1 teaspoon salt
- 1 cup chopped nuts
- 2 tablespoons orange juice
- 2 tablespoons grated orange rind
- 1 cup chopped dates
How To Make danish pudding bundt cake

Step 1Cream butter and sugar. Add eggs, one at a time, beating well. Add buttermilk until combined

Step 2Combine flour, soda, salt . Add to sugar mixture.

Step 3Add nuts, juice, rind and dates.

Step 4Pour into greased tube pan. Bake in preheated 350 degrees ove about 1 hour.

Step 5Invert pan on rack to cool a few minutes until it will release from pan.

Step 6For icing, make a thin sauce of 1 cup sugar, 1 1/4 cups orange juice and 1 Tbsp. grated orange rind. Mix well until sugar is dissolved.. Pour over warm cake and serve with Cool Whip or whipped cream.....or just make a thin confectioner sugar icing to drizzle over cake.
