These are are great citrusy, creamy dessert! I usually bring them to church functions.

Ingredients

  • 1 package yellow cake mix w/ pudding, or 1 pkg cake mix and 1 pkg instant lemon pudding mix
  • 2 - eggs
  • 8 ounces reduced-fat cream cheese, softened
  • 1/3 cup sugar
  • 1 tablespoon lemon juice
  • 1/3 cup canola or vegetable oil

How To Make cream cheese lemon bars

  • Step 1
    Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. In lg bowl, beat cake mix and pudding mix, 1 egg and oil until combined.
  • Step 2
    It will be crumbly, that's fine. reserve 1 cup of mix. Pat remaining mix into bottom of pan. Bake 15 mins.
  • Step 3
    In another bowl, beat cream cheese, egg, sugar and lemon juice until smooth. Spread over cooled crust. Sprinkle w/ remaining cake mix, bake 15 mins more.
