I found this recipe on the Internet and since I had cranberries, decided to make it for the family Easter dinner. It was very moist and packed with flavor.

Ingredients

  • 2 1/3 - egg whites
  • 1 - egg
  • 1 - white cake mix (i used duncan hines)
  • 1/3 cup oil
  • 1 cup buttermilk
  • 1 cup sour cream
  • - zest of one orange
  • 2 cups chopped cranberries
  • 3/4 cup white chocolate chips
  • 2 1/2 tablespoons heavy cream
  • 8 ounces cream cheese, softened
  • 1/2 cup butter softened
  • 2 tablespoons white chocolate instant pudding powder
  • 1 teaspoon vanilla
  • 3 - 4 cups powdered sugar

How To Make cranberry cake - steph

  • Step 1
    350 degree oven. (Yields 24 cupcakes, if making cupcakes) Gently combine egg whites, egg, oil, buttermilk, sour cream and orange zest. Stir in cake mix (for easier mixing, sift cake mix to remove lumps). Add chopped cranberries.
  • Step 2
    Pour into 9 x 13" greased pan. Bake 30 - 40 minutes, checking for doneness after 30 minutes.
  • Step 3
    White Chocolate Ganache: Melt white chocolate chips and cream together in a double boiler or in microwave. Be careful as white chocolate burns easily.
  • Step 4
    Pour on cooled cake or dip cupcakes in ganache. Let set before frosting.
  • Step 5
    Buttercream Frosting: Beat cream cheese and butter for four minutes. Add pudding mix, vanilla extract and powdered sugar. If needed, add more powdered sugar. ENJOY!
