coffee spice cake

This was a favorite of my brothers and mine growing up. Whenever we went back to visit our parents, this was the most requested item on the menu. It doesn't need any topping but I'll leave that up to you.

Ingredients
- 1 pound brown sugar
- 1/2 cup melted shortening
- 1 - egg
- 1 cup hot brewed coffee (large)
- 2 teaspoons cinnamon
- 1 teaspoon cloves
- 1/2 teaspoon alspice
- 1/2 teaspoon ginger
- 1 teaspoon baking soda
- 3 cups flour
- 1 pound raisins
How To Make coffee spice cake

Step 1Preheat oven to 375

Step 2Boil the raisins in a small amount of water for 5 minutes then drain

Step 3Mix the first 9 ingredients well, then mix in the flour and raisins

Step 4Pour into a 13 x 9 casserole dish and bake at 375 for 50 minutes. (Check after 40 minutes)
