This is a recipe from my next door neighbor - Mrs. Hearn.

Ingredients

  • 1 1/2 cups shortening
  • 2 1/2 cups sugar
  • 5 large eggs
  • 1 cup milk
  • 1 cup coconut
  • 1 teaspoon coconut flavoring
  • 3 cups flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder

How To Make coconut pound cake

  • Step 1
    Preheat oven to 300 degrees F.
  • Step 2
    Cream shortening and sugar.
  • Step 3
    Add eggs, beating after each.
  • Step 4
    Add milk and flavoring.
  • Step 5
    Add sifted dry ingredients.
  • Step 6
    NOTE: Be careful not to overbeat.
  • Step 7
    Add coconut.
  • Step 8
    Pour into a greased and floured 10-inch Bundt pan.
  • Step 9
    Bake at 300 degrees F for 1 and 1/2 hours.
