Use as much coconut to cover the cake,I usually buy a bag of coconut and always have some leftover.I found this recipe many years ago on the back of a can of Coco Lopez cream of coconut.By the way,cream of coconut can be found on the liquor aisle in the store.
I make this cake for Christmas ever year without fail.
- 1 box white or yellow cake mix
- 1/4 c. vegetable oil
- 3 eggs
- 8 oz carton sour cream
- 1 can (8 1/2 oz) coco lopez cream of coconut
- 8 oz. cream cheese
- 1 pound powdered sugar
- 2 tablespoons milk
- 1 teaspoon vanilla
How to Make Coconut Cake
- 1Mix all ingredients with electric mixer 2 mins.Bake in greased 9"x13" pan or 3 9 "round pans at 350 degrees for 30 minutes.
- 2For Frosting: Blend powdered sugar into softened cream cheese.Add milk and vanilla. Spread between cake layers,sides and top.
Sprinkle coconut over the top and sides of cake.
