~ cherry cheesecake dessert ~
A wonderful dessert to take to a potluck. Or, serve to your Valentine. I derived this recipe from my friend Linda, although I tweaked it somewhat to my liking. Enjoy!

Ingredients
- 1 - 16.5 ounces yellow cake mix / reserve 3/4 cup
- 1 - egg
- 2 - 3 tablespoons vegetable oil - enough to be able to press out into pan
- 2 - 8 ounces cream cheese - softened
- 1/2 cup sugar
- 3 - eggs
- 3 tablespoons lemon juice
- 1 1/4 cups milk
- 1 teaspoon vanilla
- 1 large can - cherry pie filling ( i use two )
How To Make ~ cherry cheesecake dessert ~

Step 1Preheat oven to 300 degree F. In a medium sized bowl, combine cake mix ( after reserving 3/4 cup ) with 1 egg and oil. Press into bottom and somewhat up the sides of a 9 x 13 baking dish. Set aside.

Step 2In a large bowl, with hand mixer, blend cream cheese with 1/2 cup sugar.

Step 3Add eggs and reserved 3/4 cup cake mix. Beat until smooth.

Step 4Add milk, lemon juice and vanilla. Blend well, make sure you scrape the sides of the bowl.

Step 5Pour evenly into prepared crust. Bake for 50 - 55 minutes or until set and beginning to become golden around edges.

Step 6Spread on the cherry topping and refrigerate until chilled and ready to serve. I also add a dollop of whipped cream to each individual piece.
