These bars are great for pot lucks, holidays or just about anytime. We love carrot cake and we love these bars. Pics are terrible...will get more later...LOL Enjoy!

Ingredients
- 3/4 cup vegetable oil
- 1 cup sugar
- 2 - eggs
- 1 teaspoon vanilla
- 1 cup flour
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- 1/8 - 1/4 teaspoon ground cloves
- 1 cup grated carrots
- 1/2 cup chopped nuts
- CREAM CHEESE FROSTING
- 3 ounces softened cream cheese
- 1 stick softened, butter
- 1 teaspoon vanilla
- 2 cups confectioners' sugar
How To Make ~ carrot cake bars ~

Step 1Preheat oven to 350 degree F. Grease an 11 x 7 baking dish. In a large bowl, cream the sugar and oil, add eggs one at a time, beating well after each addition.

Step 2Add the flour, salt, spices, vanilla and baking soda. Beat well. Fold in the carrots and nuts. Spread batter into prepared dish.

Step 3Bake for 30 - 35 minutes or until pick inserted in the center comes out clean. Cool on rack. Make frosting...

Step 4Cream together butter and cream cheese. Add vanilla and confectioner's sugar and beat until creamy. Frost cooled bars. Cut into desired sized bars.
