These bars are great for pot lucks, holidays or just about anytime. We love carrot cake and we love these bars.

Ingredients

3/4 c
vegetable oil
1 c
sugar
2
eggs
1 tsp
vanilla
1 c
flour
1/4 tsp
salt
1 tsp
cinnamon
1/2 tsp
baking soda
1/8 - 1/4 tsp
ground cloves
1 c
grated carrots
1/2 c
chopped nuts

CREAM CHEESE FROSTING

3 oz
softened cream cheese
1 stick
softened, butter
1 tsp
vanilla
2 c
confectioners' sugar

How to Make ~ Carrot Cake Bars ~

Step-by-Step

  • 1Preheat oven to 350 degree F.
    Grease an 11 x 7 baking dish.

    In a large bowl, cream the sugar and oil, add eggs one at a time, beating well after each addition.
  • 2Add the flour, salt, spices, vanilla and baking soda. Beat well. Fold in the carrots and nuts.

    Spread batter into prepared dish.
  • 3Bake for 30 - 35 minutes or until pick inserted in the center comes out clean.

    Cool on rack.

    Make frosting...
  • 4Cream together butter and cream cheese. Add vanilla and confectioner's sugar and beat until creamy.

    Frost cooled bars. Cut into desired sized bars.
